Scurvy is disease that results from vitamin C deficiency. Normal collagen synthesis depends upon the hydroxylation of proline and lysine for which vitamin C as a cofactor. With this vitamin deficiency, hydroxyproline and hydroxylysine are not formed and the collagen contains only (non-hydroxylated) proline and lysine. With these alone, the resulting collagen fibrils lack hydrogen bonding and lose mechanical stability.
